I'm at a conference situation where they have to feed 450 people very quickly with a minimum of logistcal hangups, so this is the sole thing on the menu. It's pretty good all things considered, but who, even in Louisiana, thinks, "Ohhh, just do crawfish nacho cheese burritos and custard. You know, something everybody likes..."
